Cheesy Creamy Shrimp and Grits

Main Dish

  • 1 8 oz. container Faithful Foods Pimento Cheese spread (Traditional or Jalapeno)
  • 1 bag Faithful Foods Stoneground yellow grits
  • Water
  • Half and half (optional)
  • 1 pound large shrimp- (31-35 count per pound)
  • 1/2 cup chopped raw onion
  • ¼ cup fresh chives or 1 tablespoons dehydrated chives
  • 2 fresh garlic cloves or ¼ teaspoon garlic powder
  • 2 tablespoons butter or olive oil
  • 4-6 slices bacon, fried crisp
  • Salt and pepper

Prepare grits according to package instructions, (substitute half and half for a portion of water for creamier grits). Simmer and stir frequently for about 30 minutes until grits are thick and creamy. While grits slowly simmer, prepare to cook shrimp. Over low heat pour oil or melt butter in a large skillet. Add onions, garlic and chives, and cook until lightly browned. Add shrimp, stirring frequently. Sauté until shrimp are pink and opaque and cooked through-approximately 2-3 minutes. Cover and keep warm. Add Faithful Foods Pimento Cheese spread to grits and stir gently until well mixed. Plate grits mix and top with 8-10 shrimp and liquid per serving . Sprinkle crumbled bacon on top and serve with a crisp salad and crusty bread for a delicious dinner.
