Heidi's Frosted Cranberry Salad
- 1 6-ounce package strawberry gelatin
- 1 16-ounce can whole berry cranberry sauce
- 1 20-ounce can crushed pineapple, drained
- 1 package of Festive Cranberry Orange with Pecans Incredible Spreadable Dessert Dip Mix
- 1 8-ounce package regular or reduced fat cream cheese, softened
- 1 8-ounce container regular or fat free whipped topping
Dissolve gelatin in 2 cups boiling water. Stir in cranberry sauce until dissolved. Add crushed pineapple. Pour mixture into a shallow pan, 1 1/2- to 2-inches deep. Chill until firm. Blend cranberry orange dip mix into cream cheese then fold in whipped topping. Frost congealed gelatin with mixture; chill several hours. Serve as a salad with an entree or for dessert. Serves 6.
Faithful Foods Stuffed Tidy Rice Peppers
- 6 Bell Peppers (green is traditional but colored ones are fun too!)
- 1 package Faithful Foods Tidy Rice
- 1 1/2 pound browned drained sausage
- 1 tspn. olive oil (or other oil as preferred)
- 1 purple onion chopped ( or regular or Palmetto Sweet onions)
- 1 egg or 2 egg whites
- 1 can tomato soup or tomato sauce
- Water
Preheat oven to 350 degrees F. Cut off top of peppers and gently remove seeds with a spoon. Place peppers In large pot and fill pot with water. Bring water to boil and cook peppers just until slightly tender—2 or 3 minutes. Remove peppers from pot and place in colander or drain on paper towels. Brown sausage in olive oil and add onion til tender. Drain off oil.
Place entire package of Faithful Foods Tidy Rice in large microwave safe bowl, or pot, add browned meat, 2 1/2 cups water, and the oil. For spicier rice add contents of hot pepper packet. Cover tightly with lid and boil 15-18 minutes on stove top or 20 minutes on high in the microwave until rice is tender and liquid absorbed. Allow to cool slightly. Add egg to rice, mix well and fill peppers. Place them in a baking dish . Surround peppers with any remaining rice. Mix soup with 1/2 can water or tomato sauce with ½ cup water and pour over peppers and rice. Bake until peppers are very tender and the filling is heated through—about 30 minutes*. Remove from oven and allow to sit for a few minutes before serving.
If desired you may sprinkle shredded cheddar or parmesan cheese over the peppers about halfway through bake time. Serve with a loaf of crusty bread and a crisp salad for a dinner sure to please. Faithful Foods Cherry Cheesecake and Mousse mix makes it even more special!!
Faithful Foods Herbed Bacon Meatloaf
- 1 1/2 pound ground beef (may use pork, chicken or turkey)
- 1 cup uncooked oatmeal
- 1 onion, chopped
- 1 egg beaten, (may substitute 2 egg whites)
- 1 cup tomato juice
- 1 package Faithful Foods Bacon with Herbed Veggies and Garlic Gourmet Bread Spread
- 1 8 oz. can tomato sauce
- 2 tablespoons brown sugar.
- 1 tablespoon Worcestershire sauce
Preheat oven to 350 degrees. Spray 9x5 loaf pan with cooking spray
Combine first six ingredients in large bowl and mix together with electric mixer or hands until well blended. Pat mixture loosely into prepared pan and set aside. In small bowl mix tomato sauce, brown sugar, and Worcestershire sauce. Spoon ½ of mixture on top of loaf and spread to it.. Bake for 1 hour. If desired you may add more of the sauce mixture during the last half hour.
